I’ve been perusing more beginner friendly recipes lately, and I saw a garlic roasted vegetable pasta one that seemed like it could be fun to make. Since it was mainly going to be me eating it, I figured I didn’t need as many vegetables—well that and I got a bit tired of cutting the sweet potatoes.
I felt like I had cut the pieces too large at first, so I tried cutting them down a bit more and making sure the different vegetables were similar in size, but overall I think I did a pretty neat job cubing them!

Well, except for the part where I was attempting to use my left hand with a newly sharpened knife.
On the bright side, I got to use one of my new band-aids and saw that yes, the knife sharpener does indeed work. And that I should probably hold off on using sharp things with my non-dominant hand as practice. One day we will be ambidextrous, but we have to make sure we take care of both hands until then, yes.
I tried seasoning the vegetables but well, another thing I need to work on is how to measure the spices and salts out of the bottles.

I hope the salt can find it in its heart to love all the cubes, and not just this little path I spilled it on…
I’m not sure if it’s because of how large (or small?) I cut the vegetables, or if our oven maybe isn’t as strong, but I tried following the recipe roasting instructions and well…
She needed some more time, is all I can say.
I added some more olive oil because I felt like the smoke coming off the vegetables… was more like they were burning and not necessarily roasting…
While this was going on, my sister, who had been slicing up the bell peppers, ended up finding a mini one growing inside.

Amazing how the circle of life for vegetables works.
After about an additional 15 minutes, bam!

She came out pretty sexy!
I was a bit worried that everything wouldn’t fit into the pot, but thankfully it did!

I took a small break to eat some yogurt mix that my sister threw together—vanilla with dark chocolate chips, french vanilla almond granola, and blueberries. It was pretty good, though to be honest the blueberries kept throwing me off, because in my mind, I was lumping them in with the chocolate chips, so my brain kept getting confused as it tried to process the differences in textures from what it was anticipating. I think next time I go to the store, I want to see what other granola mixes there are, and see how those flavors work with the yogurt. I tend to eat plain vanilla yogurt, but sometimes just having a plain base pairs pretty well with sweeter fruits.
Finally the moment of truth….
It was alright! A bit bland, but at the very least edible. I’m curious if I felt that way in part because I normally eat pastas with a type of sauce on them, and with this one, it was pretty much just the oil and some of the spaghetti water. The eggplants also reminded me a bit of mushrooms, so I’m not sure if that’s just how roasted eggplants taste, or if I needed to keep them in the oven a bit longer, since I think the eggplant cubes were still pretty big compared to the others. The sweet potatoes were definitely my favorite to bite into; the garlic with the skin on, not so much.
My mom and sister ended up trying some, with my mom salting it a bit more and my sister throwing in some of the edamame she had steamed earlier. Overall, I think the recipe went pretty nicely, so it’s definitely something I’ll want to revisit and alter to better suit my tastes.
On the beverage side of things, I’ve been trying to experiment—it’s honestly just adding cinnamon—with how I prep my coffee lately, as well as (finally) trying out some of the other teas I have so that my cupboard can stop being teaopolis. There’s also this green juice that my sister tried making, and it’s pretty good! I’ll have to get the recipe from her because I really do like drinking it and the fiber in it will definitely make you go places.
And it is one of my strong beliefs that happy bowels lead to happy lives, yes.
I also want to make the warm wine recipe from the Final Fantasy XIV Cookbook but I’m missing one of the ingredients, so I’ll have to make a note to go buy some, or try to see what other recipes call for oranges, that way they don’t go bad on me.
Last, but not least, I tried getting fancy with my sunny side up eggs by sprinkling in some bell peppers, and well, in theory, it was a very sexy idea.
Unfortunately the bell peppers were too heavy and broke the yolk.
But the end result still wasn’t bad! Just more of a scrambled egg stacked with tiny colorful pieces.

It's fun to experiment with these sorts of basic meals and you definitely get better / more efficient at preparing everything as time goes on, as well as figuring out what you like and what you don't. Good luck and happy cooking! ^^
